To the right of the bird's eye chilli on the tactile picture is the dried bark of a tree from Sri Lanka, which was highly prized by explorers in the 15th and 16th century. It's a reddish brown stick known as cinnamon. Feel along it to discover the ridges in its surface. The best way to get flavour from cinnamon is to let the sticks infuse in a liquid rather than using the dried powder. Add it to stewed apples for a lovely, gentle spiciness or put a short stick in curries or stews it doesn't add heat just a depth of sweetness and warmth. Ground cinnamon can used in baking and is particularly good in biscuits and muffins.
